Hand made by fourth-generation tea farmers, the Azuma family are based in the isolated Wazuka Village of Southern Kyoto.  They specialise in the cultivation and production of tencha leaves, the same style of green tea leaves used to produce matcha.   These leaves are roasted to create hojicha, which is then stone-ground into a very fine powder.  This transforms it into a rich, earthy and toasty base for a hojicha latte.  The family is also dedicated to farming without pesticides or chemical fertilisers in their tea fields.

Latte Intructions:

  • Option 1:
    Whisk 2-3g of of hojicha powder into 40ml of hot water, pour into cup and top up with steamed milk.
  • Option 2:
    Fill milk jug with cold milk and put 2-3g hojicha powder on top, steam together and serve.
